Foraging & Eating Seaweed ~ Australian Golden Kelp

Australian Algae Abundance

For us Australians, right on our doorstep floats an incredibly nutritious and regenerative aquatic plant: Seaweed.

The good news is, nearly all of the vast diverse algae available from the salty waters of Australia are not only edible but also delicious and highly nutritious.

As it rolls up in waves and hits us while we swim, or takes up residence on our sandy beaches, we treat it like a nuisance. We get scared or repulsed by it. Local councils bulldoze the plant away. By harvesting from your local beach you are effectively diverting organic matter from the tip that either-wise councils would be dumping.

We need to flow a little more love and value to this non-flowering algae that lacks true roots, leaves and vascular tissue.

Seaweeds are a very sustainable source of food - they don't need any dirt nor freshwater to grow. By introducing seaweeds in your diet, you are contributing towards more sustainable ways to consume food.

This post hopefully inspires you to get more close, personal and tangible with your local seaweeds as you learn foraging, preparation and culinary methods.

Foraging Guidelines & Etiquette

As with any type of foraging, their are rules and etiquette to be mindful of:

  1. Know the area you are foraging from -  Forage from somewhere that’s relatively clean and non-toxic. Does the council or anyone spray pesticides/poison there? Do animals typically eliminate their waste products there? For seaweeds, this means avoiding ocean sewage/pollution outlets and coeans that aren't copping a lot of industrial pollutants.
  2.  Harvest sustainability - On the land, leave some to continue to grow and spread. Leave some for other humans and also the multiple creatures that use these organic substances as a home and food.
  3. Use a sharp knife - For plants, including some seaweeds, that attach strongly to their base. This ensures you don't damage the holdfast so they can re-grow.
  4. Check the Regulations - Where ever you go, they differ. Check out the legalities and ethics in Australia.

Identification

Golden kelp (Ecklonia radiata) is a large brown to golden-brown seaweed up to 1.5 meters long.

The stem (stipe) is rounded and at the base has a holdfast that looks like the rooting part of a tree. This is not technically a root, but and anchoring device for the seaweed to hold steady underwater. You will get to know it very quickly after picking it up on the beach.

Harvesting

Golden kelp can be found all around Australia (see map below).

You will find it in big piles after big seas, mixed up with debris and other seaweeds on the beach.

Timing of Harvest

Just after high tide or after a storm where the sea leaves behind the fresh kelp.
Harvesting is in spring and autumn is more abundant because that's when they grow the most, but you can effectively find golden kelp all year round.

Please note it is best to collect seaweeds when they have naturally dislodged from their place on the seafloor. This is to ensure the least amount of disturbance to the marine ecology. This marine ecology also has significance when the kelp is in big biles on the beach, so even in this case it should be collected in small amounts and from different places on the sand/rocks.

Do not to harvest seaweed from the sea, but rather wait until it floats free.

Drying

Rinse all the sand off in a bucket or sink of cold water.

You can then leave it to dry in the sun on the floor, but ideally suspended on a drying rack or clothes line.

Sun Drying

According to Ole G. Mouritsen in his book Seaweeds: edible, available + sustainable – the UV light helps the polyphenols break down into simple tannins, which makes them taste better and further promote the digestive properties of kelp.

In 2-3 days, our seaweed was crispy dry, and turned from golden-brown to dark green.

Chop

There are a few ways to chop the kelp that I know of:

  1. Dry and then chop - this is much harder on the finger muscles and you'll need strong scissors.
  2. Chop while wet, then dehydrate. This is really only possibly if you have a mesh-like drying rack so they don't fall through, or a dehydrator. Note, you may need to use a dehydrator if the weather is very cold and moist.
  3. Marinate - This is a different way other than drying.
    1. Blanch into a large pot of boiling water for 10-30 seconds, it will turn bright green.
    2. Separate the stem from the fronds (like leaves).
    3. Cut stem into long thin strips like noodles, the stem is firmer than the fronds and should be cooked more.
    4. Cut the fronds into small squares, these parts are softer and go well on soups or stir-fries.

Preserve in a Jar Ready for Use

After chopping up a bit, add into a strong blender and blend into small granules.
It can be kept also in bigger pieces, but I like them as close to powder so I can easily add it into any dish.

Keep in a jar, ready for use.

I add these into any cooking pot (I add towards to end to only cook for a short while). I recommend cooking for a little bit, even just blanching will soften it.

  1. Vata: Seaweeds can be drying (ruksa guna), so better hydrate it (soak in water) or add to cooking with some water to pacify Vata. 
  2. Pitta: The usna virya (heating potency) of salt aggravates Pitta.
  3. Kapha: The liquid quality (dravam guna) that is immediately produced by lavana rasa and the slimy (picheela guna) in seaweed (which helps thicken up a soup) can increase kapha

Grounds the Nervous System

Sinking and heavy = grounding for nervous system. “Salt of the earth.”

The quality of moistness pacifies the vata and nourishes the nervous system.

Basically no other group of plants contains more minerals and nutrients than seaweed. 

Kelp contains about 30 minerals. Kelp is packed with iodine, calcium, sulfur, silicon, phosphorus, iron, sodium, barium, boron, chromium, lithium, potassium, aluminum, strontium, bismuth, magnesium, copper, chloride, zinc, manganese, nickel, silver, vanadium, chlorine, cobalt, gallium, tin and zirconium. It contains vitamin C, E, D, K and B complex. Thus, it is a wise food for people who have mineral deficiencies.

Iodine found in kelp has been shown to boost metabolism and support the thyroid in cases of hypothyroidism.

The high amounts of calcium and magnesium found in seaweed promotes bone health and the magnesium helps the body to absorb calcium.

Chlorophyll is a pigment that absorbs sunlight (photosynthesis), transforms it along with minerals, water and carbon dioxide to produce food for the plant itself to grow. It also is what gives plants their green colour.

Protein Pancakes (Gluten Free)

High protein savoury pancakes that is primarily made of Urad (black gram lentil) - is known to be like "meat for a vegetarian.

Medicinal Qualities: 

  • Doshas: This pancakes are good for Kapha & Pitta.
  • Season: Especially great in winter and cold climates.
  • Male Aphrodisiac - Helpful to increase sperm count in men.
  • Can be a little hard to digest. 

Ingredients

  1. Besan (chickpea) flour – 1/4 cup
  2. Urad flour - 3/4 cup
  3. Onion (chopped) - 1
  4. Salt – per taste
  5. Ajwain Seeds - 1 tsp
  6. Cumin powder – 1 tsp
  7. Tumeric – ¼ tsp
  8. Water - 1 to 2 cups
  9. Ghee or oil for cooking
  10. Fresh Coriander for garnishing
  11. Squeeze of lemon juice 🍋

Method

  1. In a large bowl mix flour, onion, salt, ajwain, turmeric & cumin seeds
  2. Add water & mix well to make a batter, ensuring no lumps of flour remain
  3. Heat tawa or non stick pan and drizzle on 1 teaspoon of ghee
  4. Spoon 2-3 tbsp of batter onto pan and spread to make a pancake
  5. Shallow fry for about ½ minute. Press down with spatula

6. Flip over and cook on other side for ½ minute

7. Spoon a little more oil or ghee on the sides of the pancake to make it crisp

8. Flip it one more time for about 10 seconds

9. Serve hot with chutney

10 Garnish: With a squeeze of lemon and fresh coriander. 🍋 🌿

Nasturtium: Medicinal Benefits of this Easy to Grow (& Find) Vegetable

This pungent pepper-like tasting plant (Tropaeolum Majus) is highly relevant and valuable right now in this pandemic time.

Not only because this edible herbaceous annual is in season (probably growing wild on a patch near you), but also nasturtium leaves are a rich source of vitamin C (see below for impressive amounts) and holds anti-bacterial and anti-viral properties.

Natural Anti-Biotic

The lush leaves have greater anti-biotic activity than the other parts of the plant, particularly helpful in urinary and respiratory tract infections.

Studies show nasturtiums inhibit the lipopolysaccharide (LPS) induced inflammatory response in primary human cells of the immune system.

Respiratory Health

Nasturtium also supports respiratory health - particularly in upper respiratory infections. The pungent taste (Katu rasa) reduces catarrh formation and expels phlegm.

If you ever feel a sore throat coming, eat a few nasturtium leaves lightly cooked to prevent.

Note: stalks also contain these properties to a lesser degree, and like most veggies, the smaller and younger the leaves, the more medicinal effect.

To Cook With

Chop the leaves and stalk finely and add to the hot dish after you turn the flame off and allow the heat of the food to blanch the nasturtium.

Garnish the beautiful raw flowers on your ready-made dish to brighten it up and add a tinge of pungency.

Oil Massage for Skin Cleansing & Soap Alternative

Scrubbing, washing, cleaning and polishing our body.

Whether it is with a single bar of handmade organic soap or the latest innovative package of products to sequentially be applied to our body.

Perhaps we are over being over-hygienic? Or perhaps not, and what our biology (body), specifically our microbiology, really wants, is an alternative way to not only maintain cleanliness, but feel pristine.

The Problem with Soap and Scrubbing

Nowadays we are cleaning and scrubbing all the good oils off our skin. These oils feed the microbes (micro-bugs) on our skin.

Microbes do the heavy lifting for just about all our bodily functions, including skin functions like ensuring proper elimination of waste through sweat glands, maintaining complexion, regulating skin inflammatory responses and general immunity (which functions highly at the skin level).

The Origin of Soap

Legends say, oils from animal sacrifice seeped out into the river and when mixed with the water, created froth. Women who were cleaning clothes in the river noticed that with this froth, the clothes were washing better.

Soap Alternative: Oil Massage

Fast-forward to today, we now know oil plus water creates a soap-onification effect that takes the bad microbes out of the skin.

Oil is lipophilic, meaning it pulls out any bad oils, grease or grime from the skin.

The same lipophilic effect happens when we ingest ghee. It will pull heavy metals and fat soluble toxins out of the fat cells in our stomach.

Thus, ghee is a key ingredient for cleansing and detoxification in Ayurveda.

Oil Pulling, another ancient Ayurvedic technique which involves swishing oil in mouth, literally pulls plaque and other toxins out of the oral cavity and tissues of the head, neck and throat.

Some Indians who are 80 years old have had a massage pretty much everyday of their lives, and some have never have even used soap!

Self-Massage (Self-Abhyanga) is part of their daily regimen.

We bathe and wash ourselves daily (I hope), well, we also go to anoint oil on our skin and then massage it onto our body to move blood, lymph, calm the billions of neuro-receptors on our skin and feed the microbiology living there!

You may think you would start to smell, but interestingly enough, if you rub the oil on well, you can create a really effective cleansing technique.

Your body odour may very well dissipate, perhaps you won’t need deodorant anymore, and you can reduce the amount of soap you use (I still recommend regularly using natural soap in your “under-bits”).

Nourish your body with medicated oils and take it to the next level.

You put it on your skin, the herbs go in, do the action, and then pulls impurities out of your skin to be washed off.

Squalene is the exact oil that our skin makes ourself. Let’s optimise that.


Fruit Should Be Eaten Alone

Fruit mixed with other foods is one of the more common incompatible food combinations (Viruddha Ahara) prepared on western plates today. Not only has Ayurveda said this for thousands of years, but now modern science and logic also show it.

Anthropological Reasoning

Ideally fruit is eaten alone (away from other foods). Historically this is what happened. Ancestrally we would come across a fruit tree or a berry bush and go all out on that fruit and that fruit only. That would be our meal before fasting and walking for another 5 hours at least before we came across another gift from nature ready to harvest.

Scientific Reasoning

Fruit (fructose) burns quickly, but glucose (grains) burns even quicker.

Take the common granola topped with fruit for example:

When you eat the granola (grains, glucose), it will go into your blood stream quickly. By the time the fruit gets processed by the digestive system, the body would have already met it’s nutritional and energy needs. The fruit will turn into triglycerides, which will be stored as “extra fat” that is worthless and disruptive.

If you eat the fruit alone, those triglycerides go through your lymph and deliver energy to every cell in your body in a harmonious and stable fashion.

That is why fruit comes in summer. After ripping on the vine all year long, it is now ready to be eaten. In abundance and alone.

Ayurvedic Reasoning

Add another ingredient like milk or yoghurt into your granola and you got another food type that will digest at a different time.

Mixing different food types together creates confusion to your digestive system and generates indigested food material (ama), that is the cause for most diseases.

Ayurveda says that the synergy of various substances (foods or herbs) may create a final end product with properties that are incompatible to the digestive system, thus a precursor for disease.

The specific properties of a substance include the taste (rasa), energetic/potency effect (heating or cooling) (virya), and the post-digestive effect (vipaka).

Take banana + dairy for example:

A common food combination in the west today (banana smoothie, banana on your yoghurt granola) that Ayurveda quite strongly condemns as an incompatible food combination that can particularly cause digestive and skin diseases.

Banana has a sour vipaka (stimulating action reducing body fluids) while milk has a sweet vipaka (nourishing action increasing body fluids). The different vipakas (post-digestive effects) conflict each other thus create an incompatible food composition that typically deposits as ama in the body and will manifest as disease later. It is the synergy of these various food properties (rasa, virya, vipaka) that will either nourish and provide energy to the body, or create ama.

That all said, please note this is not a massive problem and there are much bigger dietary problems and unwholesome trends today. However, mixing fruit with other foods can cause indigestion, gas, bloating and other issues.

Ways To Eat Fruit

Fruit as a meal itself for breakfast or supper. This is great for those who have little appetite in the morning and for those who want to shift towards eating lighter dinners. It is more so indicated in spring or summer rather than winter when your agni is stronger.

But this is only for you if you are a good digester and have established fat metabolism, ie. have established a calm stable source of fuel (fat), rather then being energy dependant on foods as fuel (sugar).

Add honey onto your fruit. Honey drizzled on grapefruit (include white pith) is a great weight-loss breakfast. Poached apples or pears with sultanas and cinnamon is another good breakfast.

Fruit as afternoon snack is perhaps the best time to eat fruit.

Fruit after your meal if you are still hungry. This is ok but not ideal. Also be cautious when mixing (e.g. if you had milk in your meal best no have fruit).

Don’t mix sour and sweet fruits. It is best to just eat sweet fruits, or just sour or just astringent fruits. This is why generally you eat as much of a single fruit you want (caution diabetics).

Dried fruits are ok to mix with other foods. Dried fruits like sultanas/raisins, figs, dates are sweet so you can have with sweet foods like granola, porridge and hot milk. When you mix sour fruits with sweet substances, especially milk, this is a recipe for incompatibility.

Mango is the only fruit you can mix with dairy. Go all out on the mango milkshakes, mango smoothies and mango lassis. Just ensure it is fresh mango in season.
